- In a mixing bowl, whisk together soy sauce, honey, garlic, lime juice, salt, and pepper. Add in the diced chicken and mix until well-coated. Let it marinate in the refrigerator for at least 15 minutes.
- While the chicken marinates, chop the pineapple, bell peppers, and red onion.
Assembling and Grilling
- Once marinated, thread the chicken, pineapple, bell peppers, and onion onto skewers, alternating between each ingredient.
- Heat your grill or grill pan to medium-high.
- Place the kabobs on the grill, cooking for about 10-15 minutes, turning them occasionally.
- Remove the kabobs from the grill and let them rest for a few minutes before serving.
Notes
You can substitute chicken for shrimp, tofu, or beef. Leftovers can be stored in an airtight container in the fridge for up to three days.
