Preparation
  1. In a mixing bowl, whisk together soy sauce, honey, garlic, lime juice, salt, and pepper. Add in the diced chicken and mix until well-coated. Let it marinate in the refrigerator for at least 15 minutes.
  2. While the chicken marinates, chop the pineapple, bell peppers, and red onion.
Assembling and Grilling
  1. Once marinated, thread the chicken, pineapple, bell peppers, and onion onto skewers, alternating between each ingredient.
  2. Heat your grill or grill pan to medium-high.
  3. Place the kabobs on the grill, cooking for about 10-15 minutes, turning them occasionally.
  4. Remove the kabobs from the grill and let them rest for a few minutes before serving.

Notes

You can substitute chicken for shrimp, tofu, or beef. Leftovers can be stored in an airtight container in the fridge for up to three days.
