  • 1 pound boneless, skinless chicken breasts (cut into strips)
  • 1 cup crushed pretzels Use gluten-free pretzels if desired.
  • 1/2 cup whole wheat or almond flour Almond flour can be used for gluten-free option.
  • 2 pieces eggs (beaten)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or a drizzle of olive oil.
  2. Prepare the chicken by cutting it into strips of even size for uniform cooking.
  3. In a bowl, mix crushed pretzels, flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Set up a dredging station: whisk the eggs in a separate bowl.
  5. Coat each chicken strip by dipping it into the egg mixture and then coating it with the pretzel mixture.
  6. Arrange the coated chicken tenders on the prepared baking sheet.
  7. Bake in the oven for 20 minutes, turning them halfway through until the edges turn golden brown.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for later. To reheat, bake at 350°F (175°C). Let tenders rest after baking for better flavor. Broil for extra crunch if desired.
