Cooking
- In a cast-iron skillet, heat on medium-high. Add the chicken skin-side down and cook until golden, roughly 5 minutes.
- Transfer the skillet to the preheated oven. Bake for about 20-25 minutes or until the chicken is cooked through and the juices run clear.
Serving
- Allow the chicken to rest for a few minutes before plating.
