  • 4 ears Fresh Corn Grilled and cut off the cob
  • 1 cup Greek Yogurt Substitute for traditional dressings
  • 1 small Red Onion Diced
  • 1/2 cup Cilantro Chopped
  • 2 tablespoons Lime Juice For a zesty kick
  • 1 teaspoon Chili Powder For warmth
  • 1/2 cup Cotija Cheese Optional, can be replaced with nutritional yeast for dairy-free
  • 1 medium Avocado Optional, adds creaminess

Method
 

Preparation
  1. Grill the fresh corn until slightly charred, then let it cool before cutting the kernels off the cob.
  2. In a large mixing bowl, combine the grilled corn, diced red onion, cilantro, and diced avocado.
Dressing
  1. In a separate bowl, whisk together Greek yogurt, lime juice, chili powder, and a pinch of salt.
Combine
  1. Pour the dressing over the corn mixture and gently toss until everything is well coated.
  2. Sprinkle with Cotija cheese if desired.
  3. Serve immediately or chill for an hour to let the flavors meld together.

Notes

Feel free to substitute veggies based on availability. For added spice, include jalapeƱos or hot sauce.
