Preparation
- Preheat your oven to 400°F (200°C).
- In a bowl, combine the chopped rosemary, thyme, parsley, minced garlic, and olive oil. Season with salt and pepper.
- Pat the filet mignon steaks dry with paper towels. Generously season with salt and pepper on both sides.
Cooking
- In an oven-safe skillet over medium-high heat, add olive oil and lay the steaks in the skillet. Sear for 3-4 minutes on one side.
- Flip the steaks and spoon the herb mixture on top, pressing it down gently.
- Transfer the skillet to the preheated oven and bake for 8-10 minutes for medium-rare.
- Use a meat thermometer to check for doneness (130°F for medium-rare).
- Remove from oven and let the steaks rest for 5 minutes before serving.
Notes
For added flavor, top the filet with a pat of compound butter mixed with herbs or blue cheese. If grilling, follow the same searing method.
