  • 1 tablespoon Fresh Herbs (rosemary) Enhances flavor and aroma.
  • 1 tablespoon Fresh Herbs (thyme) Enhances flavor and aroma.
  • 1 tablespoon Fresh Herbs (parsley) Enhances flavor and aroma.
  • 2 cloves Garlic (minced) Adds warming, familiar scent.
  • 2 tablespoons Olive Oil Helps create a crust without overwhelming meat flavor.
  • Salt and Pepper (to taste) Essential for seasoning.
  • 1 tablespoon Mustard (optional) Dijon or whole grain recommended.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the chopped rosemary, thyme, parsley, minced garlic, and olive oil. Season with salt and pepper.
  3. Pat the filet mignon steaks dry with paper towels. Generously season with salt and pepper on both sides.
Cooking
  1. In an oven-safe skillet over medium-high heat, add olive oil and lay the steaks in the skillet. Sear for 3-4 minutes on one side.
  2. Flip the steaks and spoon the herb mixture on top, pressing it down gently.
  3. Transfer the skillet to the preheated oven and bake for 8-10 minutes for medium-rare.
  4. Use a meat thermometer to check for doneness (130°F for medium-rare).
  5. Remove from oven and let the steaks rest for 5 minutes before serving.

Notes

For added flavor, top the filet with a pat of compound butter mixed with herbs or blue cheese. If grilling, follow the same searing method.
