  • 1 tablespoon Olive oil Can substitute with avocado oil.
Main Ingredients
  • 1 pound Lean ground beef or turkey Can use cooked shredded chicken or plant-based meat.
  • 1 medium Onion, diced Adds sweetness and depth.
  • 3 cloves Garlic, minced Brightens the broth.
  • 1 cup Bell pepper, diced Optional, for color and crunch.
  • 2 tablespoons Taco seasoning Store-bought or homemade blend.
  • 1 can (14.5 ounces) Diced tomatoes with juices Adds acidity and body.
  • 1 can Black beans, drained and rinsed Provides protein and texture.
  • 1 cup Corn Can be fresh, frozen or canned.
  • 4 cups Low-sodium chicken or vegetable broth Adjust for thickness.
  • 1 cup Greek yogurt or sour cream Use dairy-free yogurt to make it vegan.
  • 1 cup Shredded cheddar or dairy-free cheese Optional for indulgence.
  • 1 tablespoon Lime juice Brightens the flavors.
  • Fresh cilantro, chopped For garnish.
  • Salt and pepper To taste.

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and bell pepper; sauté until softened and fragrant, about 4 minutes.
  3. Add the garlic and cook for 30 seconds until fragrant, then add the ground meat.
  4. Cook, breaking up the meat with a spoon, until browned and cooked through.
Cooking
  1. Sprinkle in the taco seasoning and stir to coat.
  2. Pour in the diced tomatoes, drained beans, corn, and broth.
  3. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
  4. Reduce heat and stir in the Greek yogurt and shredded cheese until the soup becomes luxuriously creamy.
  5. Taste and adjust salt, pepper, and lime juice.
  6. Let it simmer gently for 5 to 10 minutes so the flavors marry.
  7. Serve hot with your favorite toppings.

Notes

For a slightly thinner soup, add a splash more broth. For a smoother texture, use an immersion blender to blend a third of the soup and then stir it back in. Make it vegetarian by swapping meat for extra beans and cooked lentils, or dairy-free with coconut yogurt.
