Ingredients

Main Ingredients
  • 1 lb chicken breast tenders Lean protein that cooks quickly and stays juicy.
  • 1 cup breadcrumbs Panko for extra crispiness, or whole wheat for a healthier alternative.
  • ½ cup grated Parmesan cheese Adds a nutty flavor; you can swap with nutritional yeast for a dairy-free version.
  • 1 tsp garlic powder Fresh garlic can add depth if you prefer.
  • 1 tsp onion powder For a hint of sweetness.
  • 1 tsp smoked paprika Adds a lovely depth; feel free to adjust to your spice preference.
  • to taste salt and pepper Essential for enhancing flavor.
  • 2 large eggs These bind the breadcrumbs and help create a crispy coating.
  • as needed cooking spray or olive oil For crisping up those tenders without frying.

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and lightly spray with cooking spray or drizzle with olive oil.
  3. In one bowl, beat the eggs until frothy. In another bowl, combine breadcrumbs, Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Dip each chicken tender into the egg mixture, allowing excess to drip off, then coat in the breadcrumb mixture.
  5. Arrange the coated chicken tenders in a single layer on the prepared baking sheet.
Cooking
  1. Bake in the preheated oven for 15 minutes, flipping them halfway.
  2. Check for doneness, ensuring the chicken reaches an internal temperature of 165°F (75°C).
  3. Let them rest for a few minutes before serving.

Notes

Healthier swaps include using almond flour instead of breadcrumbs for a gluten-free option. Serve with dipping sauces like honey mustard or barbecue.
