Ingredients
  

Salad Base
  • 4 large carrots Use firm, fresh carrots for best crunch.
  • 1 cup raisins Golden raisins add color; swap for dried cranberries for a tangy twist.
Dressing
  • 1/2 cup mayonnaise For creaminess; substitute Greek yogurt for a lighter, tangier version.
  • 1 tablespoon honey or maple syrup Adjust to taste for a sweeter or less sweet dressing.
  • 1 tablespoon fresh lemon juice Brightens the dish and balances the sweetness.
  • 1/4 teaspoon ground cinnamon Optional; adds a warm, nostalgic note.
  • pinch salt & freshly ground black pepper To taste.
Optional Additions
  • 1/4 cup chopped toasted walnuts or pecans Optional for crunch and depth.
  • 1 tablespoon finely chopped fresh parsley or mint Optional for freshness.

Method
 

Preparation
  1. Peel and grate the carrots using a box grater or a food processor with the grating attachment.
  2. Place the grated carrots in a large mixing bowl. Add the raisins.
Making the Dressing
  1. In a small bowl, whisk together the mayonnaise, honey or maple syrup, lemon juice, cinnamon (if using), salt, and black pepper.
  2. Taste and adjust seasoning as needed.
Combining
  1. Pour the dressing over the carrots and raisins, and toss gently until evenly coated.
  2. If using, fold in the toasted nuts and chopped herbs.
Chilling
  1. Cover and refrigerate for at least 15 minutes to let flavors marry.
  2. Before serving, give the salad a final stir and adjust seasoning if needed.

Notes

For vegan version, use vegan mayonnaise and maple syrup. Store in an airtight container in the refrigerator for up to 3–4 days. Add fresh herbs at the end for brightness.
