Preparation
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the carrot sticks with olive oil, honey, minced garlic, salt, and pepper until evenly coated.
- Spread the carrots out on a baking sheet lined with parchment paper in a single layer.
Cooking
- Place the carrots in the preheated oven and roast for 20 minutes, stirring halfway through.
- In the last 5 minutes of roasting, sprinkle crumbled feta cheese over the carrots.
Serving
- Remove from the oven, sprinkle with fresh thyme, and serve warm.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. They freeze well; just spread them on a baking sheet to freeze and then transfer to a freezer bag. To reheat, bake in an oven at 350°F (175°C) until warmed through.
