  • 2 tablespoons Olive Oil Opt for high-quality extra virgin for the best flavor.
  • 1/2 cup Feta Cheese, crumbled For creamy texture; use goat cheese for a different taste.
  • 1 teaspoon Fresh Thyme Earthy notes elevate the dish; other herbs can be used too.
  • Salt and Pepper To taste.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the carrot sticks with olive oil, honey, minced garlic, salt, and pepper until evenly coated.
  3. Spread the carrots out on a baking sheet lined with parchment paper in a single layer.
Cooking
  1. Place the carrots in the preheated oven and roast for 20 minutes, stirring halfway through.
  2. In the last 5 minutes of roasting, sprinkle crumbled feta cheese over the carrots.
Serving
  1. Remove from the oven, sprinkle with fresh thyme, and serve warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. They freeze well; just spread them on a baking sheet to freeze and then transfer to a freezer bag. To reheat, bake in an oven at 350°F (175°C) until warmed through.
