  • 1 pound Sausages (chicken, pork, or plant-based) Choose your favorite type.
  • 4 cloves Fresh Garlic, minced For a deep, rich flavor.
  • ¼ cup Honey Use local honey if possible.
  • 2 tablespoons Soy Sauce Or tamari for gluten-free option.
  • 2 cups Broccoli Florets Fresh or frozen.
  • 1-2 Bell Peppers, sliced A splash of color and sweetness.
  • 2 tablespoons Olive Oil Great for roasting.
  • Salt and Pepper To taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper for easy cleanup.
  3. In a large bowl, combine honey, minced garlic, soy sauce, olive oil, salt, and pepper. Mix well.
  4. Add the sausages to the bowl and toss them to coat.
  5. Prepare the vegetables by tossing broccoli and bell peppers in the bowl with any leftover sauce.
Cooking
  1. Spread the sausages and vegetables evenly on the baking sheet in a single layer.
  2. Roast in the oven for 20 minutes, until sausages reach an internal temperature of 165°F (74°C) and everything is caramelized.

Notes

For a lighter option, use turkey or chicken sausage. Feel free to substitute seasonal vegetables like zucchini. For some heat, add red pepper flakes or sriracha to the sauce.
