Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment for an easy lift.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, whisk melted butter and brown sugar until glossy and fragrant.
- Whisk in the eggs, then stir in yogurt and vanilla.
- Fold in the mashed bananas until streaks disappear.
- Gently fold in nuts or chocolate if using.
- Add the dry ingredients to the wet in two stages, folding just until combined.
- Pour into the prepared pan, smooth the top, and bake for 55–65 minutes.
- Let the loaf cool in the pan for 15 minutes, then turn it out onto a rack.
Notes
For best results, don’t overmix once the flour is added to keep the bread tender. Test doneness in the center; if the top browns too quickly, tent with foil.
