  • 1/2 cup unsalted butter, melted and cooled adds richness.
  • 3/4 cup brown sugar, packed gives a deep caramel note and moisture.
  • 2 large eggs, room temperature binders that add structure.
  • 1/2 cup plain yogurt or Greek yogurt secret to that unbelievably moist texture.
  • 1 teaspoon vanilla extract warmth and aroma.
  • 3 very ripe bananas, mashed (about 1 1/2 cups) the star ingredient; the riper the sweeter.
  • 1/2 cup chopped walnuts or chocolate chips (optional) for texture and indulgence.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment for an easy lift.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, whisk melted butter and brown sugar until glossy and fragrant.
  4. Whisk in the eggs, then stir in yogurt and vanilla.
  5. Fold in the mashed bananas until streaks disappear.
  6. Gently fold in nuts or chocolate if using.
  7. Add the dry ingredients to the wet in two stages, folding just until combined.
  8. Pour into the prepared pan, smooth the top, and bake for 55–65 minutes.
  9. Let the loaf cool in the pan for 15 minutes, then turn it out onto a rack.

Notes

For best results, don’t overmix once the flour is added to keep the bread tender. Test doneness in the center; if the top browns too quickly, tent with foil.
