  • 1 pound ground Italian sausage Mild or sweet; turkey sausage works for a lighter choice.
  • 1 cup fresh breadcrumbs or panko Whole-wheat breadcrumbs are a healthy option.
  • 1/2 cup grated Parmesan cheese Nutritional yeast can substitute for dairy-free diets.
  • 2 large eggs Bind everything together.
  • 1/2 cup milk Any milk works; almond or oat milk for dairy-free.
  • 1 small onion, finely diced Sweet and aromatic.
  • 3 cloves garlic, minced The heartbeat of this recipe.
  • 1/4 cup chopped fresh parsley Basil is a lovely alternative.
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce, plus extra for glazing Use homemade or a high-quality jar for convenience.
  • 1 cup shredded mozzarella or slices of provolone (optional filling) For a melty center.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment or lightly oil a loaf pan.
  2. In a large bowl, combine the ground beef, Italian sausage, breadcrumbs, Parmesan, eggs, milk, onion, garlic, parsley, oregano, salt, and pepper. Use your hands to mix gently until just combined — don’t overwork the meat.
  3. If using a cheese filling, flatten the meat mixture into a rectangle on a piece of parchment, layer the cheese down the center, and fold the meat over to seal. Otherwise, shape the mixture into a loaf and place it on the pan.
  4. Spoon 1/2 cup marinara sauce over the top and spread evenly to glaze.
Cooking
  1. Bake for 45 to 50 minutes, until the internal temperature reaches 160°F (71°C) and the top is slightly caramelized.
  2. Let the loaf rest for 10 minutes before slicing. Serve with extra sauce on the side.

Notes

For a gluten-free variation, use gluten-free breadcrumbs. For a vegetarian spin, try a lentil and mushroom loaf with vegan cheese.
