- In a large skillet, heat a splash of olive oil over medium heat.
- Add the Italian sausage, breaking it apart with a spatula. Cook for about 5 minutes or until browned and cooked through.
- Toss in the diced onion and minced garlic. Sauté for another 3-4 minutes, until the onions are translucent and the garlic is fragrant.
- Stir in the drained white beans and the can of diced tomatoes (including the juices). Allow everything to meld together for about 5 minutes.
- Sprinkle in the Italian seasoning, salt, and pepper to taste. Stir to combine and allow to simmer for another 5 minutes.
- Just before serving, fold in the chopped spinach. It will wilt down immediately.
- Ladle the mixture into bowls or serve directly from the skillet.
Notes
This dish can be customized with additional vegetables or spices. It's also great served with crusty bread or a green salad.
