  • 2 cans (15 ounces each) white beans, drained and rinsed (cannellini or great northern beans) Provides creamy texture.
  • 1 medium onion, diced For a sweet, aromatic base.
  • 3 cloves garlic, minced Garlic adds depth of flavor.
  • 1 can (14.5 ounces) diced tomatoes with juices Adds a juicy burst of flavor.
  • 1 cup spinach, roughly chopped Adds vibrant color and nutrition.
  • 1 teaspoon Italian seasoning Dried herbs blend contributes depth.
  • to taste salt and pepper Adjust seasoning as preferred.
  • Olive oil for cooking Use for sautéing the sausage.

Method
 

Preparation
  1. In a large skillet, heat a splash of olive oil over medium heat.
  2. Add the Italian sausage, breaking it apart with a spatula. Cook for about 5 minutes or until browned and cooked through.
  3. Toss in the diced onion and minced garlic. Sauté for another 3-4 minutes, until the onions are translucent and the garlic is fragrant.
  4. Stir in the drained white beans and the can of diced tomatoes (including the juices). Allow everything to meld together for about 5 minutes.
  5. Sprinkle in the Italian seasoning, salt, and pepper to taste. Stir to combine and allow to simmer for another 5 minutes.
  6. Just before serving, fold in the chopped spinach. It will wilt down immediately.
  7. Ladle the mixture into bowls or serve directly from the skillet.

Notes

This dish can be customized with additional vegetables or spices. It's also great served with crusty bread or a green salad.
