- In a large pot, heat olive oil over medium heat. Add diced onions, carrots, and celery. Sauté until the onions are translucent, about 5 minutes.
- Push the vegetables to the side of the pot and add the Italian sausage. Cook until browned, breaking it up with a spoon as it cooks, about 5–7 minutes.
- Stir in the minced garlic and Italian seasoning, cooking for an additional minute until fragrant.
- Pour in the diced tomatoes with their juices and the canned white beans. Mix everything together.
- Add the vegetable broth and bring the mixture to a gentle simmer. Let it cook for 15 minutes to develop the flavors.
- Stir in the spinach or kale and cook until wilted, about 2–3 minutes.
- Taste and adjust salt and pepper as needed. Serve hot.
Notes
For a vegetarian version, swap the sausage for plant-based sausage or mushrooms and use vegetable broth. Store in the fridge for up to 3 days or freeze for later.
