Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add diced onions, carrots, and celery. Sauté until the onions are translucent, about 5 minutes.
  2. Push the vegetables to the side of the pot and add the Italian sausage. Cook until browned, breaking it up with a spoon as it cooks, about 5–7 minutes.
  3. Stir in the minced garlic and Italian seasoning, cooking for an additional minute until fragrant.
  4. Pour in the diced tomatoes with their juices and the canned white beans. Mix everything together.
  5. Add the vegetable broth and bring the mixture to a gentle simmer. Let it cook for 15 minutes to develop the flavors.
  6. Stir in the spinach or kale and cook until wilted, about 2–3 minutes.
  7. Taste and adjust salt and pepper as needed. Serve hot.

Notes

For a vegetarian version, swap the sausage for plant-based sausage or mushrooms and use vegetable broth. Store in the fridge for up to 3 days or freeze for later.
