  • 8 ounces Mozzarella Cheese Creamy and mild; choose bocconcini for bite-sized pieces.
  • 1/2 cup Basil Leaves Fresh and aromatic; substitute with fresh parsley if desired.
  • 3 tablespoons Extra Virgin Olive Oil Adds richness and depth.
  • 2 tablespoons Balsamic Glaze Could use balsamic vinegar instead.
  • to taste Salt Simple seasoning to enhance flavors.

Preparation
  1. Start by washing your fresh cucumbers and tomatoes. Pat them dry with a clean towel.
  2. Cut the cucumbers into thin rounds or half-moons, depending on your preference.
  3. If using larger tomatoes, dice them into bite-sized pieces. Cherry tomatoes can be halved.
  4. If using bocconcini, tear them into smaller pieces; otherwise, just slice your mozzarella.
Assembly
  1. In a large mixing bowl, combine the cucumbers, tomatoes, and mozzarella.
  2. Tear the basil leaves by hand and toss them in with the other ingredients.
  3. Drizzle with extra virgin olive oil and balsamic glaze. Season with salt and pepper.
  4. Gently toss everything together, ensuring each piece is coated in the dressing.
  5. Serve immediately!

This salad is versatile; feel free to add grilled chicken or chickpeas for added protein or try different vinegars or dressings.
