For the chicken
  • 1.5 pounds Chicken Thighs The star of the dish for juiciness

Method
 

Preparation
  1. In a medium bowl, whisk together soy sauce, mirin, brown sugar, minced garlic, grated ginger, and sesame oil until well combined.
  2. Place the chicken thighs in a resealable plastic bag or a dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal or cover and let it marinate in the refrigerator for at least 15 minutes, or up to overnight for maximal flavor.
  3. Preheat your grill to medium-high or warm a cast-iron skillet over medium heat.
Cooking
  1. Remove the chicken from the marinade (discard the leftover marinade) and place it on the grill or skillet.
  2. Cook for about 6-7 minutes on each side, until a nice char is achieved and the internal temperature reaches 165°F.
Serving
  1. Let the chicken rest for a few minutes. Slice or leave whole, and sprinkle freshly chopped spring onions on top for the finishing touch.

Notes

For an extra kick, add sriracha or red pepper flakes to the marinade. Use skinless thighs for a lighter option. Great for backyard gatherings with various dipping sauces.
