  • 1 lb Kielbasa Sausage Smoky and flavorful, substitute with turkey sausage for a lighter option.
  • 1 cup Rice Use long-grain white or brown rice; jasmine or basmati for nutty flavor.
  • 2 cups Chicken Broth Use low-sodium for a healthier choice.
  • 1 cup Bell Peppers Sliced; any color will do, but red and yellow are visually appealing.
  • 1 medium Onion Chopped finely for aroma.
  • 2 cloves Garlic Minced for flavor.
Seasonings
  • 1 tsp Paprika Enhances taste without overpowering.
  • to taste Salt Adjust according to preference.
  • to taste Pepper Adjust according to preference.

Method
 

Cooking the Kielbasa
  1. In a large skillet, heat a splash of oil over medium-high heat.
  2. Add the sliced kielbasa and cook until browned and crispy, about 5–7 minutes.
Adding Vegetables
  1. Toss in the chopped onion and bell peppers. Stir-fry for another 3–4 minutes until they soften.
Finishing Touches
  1. Add the minced garlic and cook for an additional minute until fragrant.
  2. Pour in the rice, stirring well to coat it with the juices and flavors from the sausage and vegetables.
  3. Carefully add the chicken broth and stir everything together. Season with paprika, salt, and pepper to taste.
  4. Increase the heat until the mixture comes to a boil, then reduce to low. Cover the skillet and let it cook for 15 minutes, or until the rice is tender and has absorbed the broth.
  5. Once done, remove from heat and fluff with a fork. Garnish with fresh parsley or a squeeze of lemon if desired.

Notes

Add greens like baby spinach or kale in the last couple of minutes of cooking for added nutrition. Swap proteins or go vegetarian with marinated tofu.
