Preparation
- Preheat your oven to 350°F (175°C).
- If using whole potatoes, peel and slice them thinly or prepare frozen shredded potatoes.
- In a skillet, brown the kielbasa over medium heat until golden.
- In a large bowl, combine the sliced potatoes, cooked kielbasa, cream of mushroom soup, chopped onion, milk, salt, and pepper. Stir until everything is well-coated.
- Fold in half of the cheese.
Cooking
- Pour the mixture into a greased 9x13-inch baking dish. Top with the remaining cheese and cover with foil.
- Bake for 30 minutes covered, then remove the foil and bake for an additional 15 minutes, or until cheese is bubbly and golden.
- Allow the casserole to cool slightly before serving.
Notes
You can add sautéed bell peppers for extra flavor. For a lower-carb option, consider using cauliflower or zucchini instead of potatoes. Allow to rest for about 10 minutes before serving for easier portioning.
