  • 10.5 oz Cream of Mushroom Soup Use homemade or lower-sodium alternatives for a healthier option.
  • 1 medium Onion (chopped) Onion powder can be used if needed.
  • 1/2 cup Milk Substitute with almond or oat milk for a dairy-free option.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If using whole potatoes, peel and slice them thinly or prepare frozen shredded potatoes.
  3. In a skillet, brown the kielbasa over medium heat until golden.
  4. In a large bowl, combine the sliced potatoes, cooked kielbasa, cream of mushroom soup, chopped onion, milk, salt, and pepper. Stir until everything is well-coated.
  5. Fold in half of the cheese.
Cooking
  1. Pour the mixture into a greased 9x13-inch baking dish. Top with the remaining cheese and cover with foil.
  2. Bake for 30 minutes covered, then remove the foil and bake for an additional 15 minutes, or until cheese is bubbly and golden.
  3. Allow the casserole to cool slightly before serving.

Notes

You can add sautéed bell peppers for extra flavor. For a lower-carb option, consider using cauliflower or zucchini instead of potatoes. Allow to rest for about 10 minutes before serving for easier portioning.
