- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the leftover mashed potatoes, shredded cheese, and the egg. Mix until well incorporated.
- Stir in breadcrumbs and green onions. Add salt, pepper, and optional spices for an extra kick.
- Scoop out tablespoon-sized portions and shape them into small balls or patties.
- Place them on a parchment-lined baking sheet, leaving some space in between.
Baking
- Bake for 15–20 minutes until the cheese is melted and the bottom is a crispy, golden brown.
- Let them cool slightly before serving.
