Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the leftover mashed potatoes, shredded cheese, and the egg. Mix until well incorporated.
  3. Stir in breadcrumbs and green onions. Add salt, pepper, and optional spices for an extra kick.
  4. Scoop out tablespoon-sized portions and shape them into small balls or patties.
  5. Place them on a parchment-lined baking sheet, leaving some space in between.
Baking
  1. Bake for 15–20 minutes until the cheese is melted and the bottom is a crispy, golden brown.
  2. Let them cool slightly before serving.

Notes
