  • 8 oz Orzo pasta cooks quickly and soaks up flavors beautifully
  • 1 lb Shrimp fresh or frozen adds lean protein
  • 4 oz Feta cheese brings creamy, tangy goodness
  • 1 tbsp Lemon juice fresh juice is best for flavor
  • 2 tbsp Olive oil for sautéing and adding richness
  • 2 cloves Garlic minced, adds aromatic flavor
  • 1 tbsp Fresh parsley or oregano for garnish and flavor

Method
 

Cooking the Orzo
  1. Bring a pot of salted water to a boil and cook the orzo according to package instructions until al dente. Drain and set aside.
Sautéing the Shrimp
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about a minute until fragrant.
  2. Then, add shrimp, cooking for 2-3 minutes on each side until they turn pink and opaque.
Combining Ingredients
  1. Lower the heat and mix in the cooked orzo along with fresh lemon juice and crumbled feta. Stir everything together until the feta begins to melt into the mixture.
Final Seasoning
  1. Sprinkle with salt, pepper, and chopped parsley or oregano. Give it one last gentle stir to blend the flavors beautifully.
Serving
  1. Plate it up, drizzle with more olive oil if desired, and enjoy this comforting food with your loved ones.

Notes

Feel free to substitute with whole grain or gluten-free orzo, or replace shrimp with chicken for a different protein option. This dish can also be served cold as a pasta salad.
