Preparation
  1. In a large skillet over medium heat, add a drizzle of olive oil and let it warm up.
  2. Add the diced potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.
  3. Toss in the chopped onions and bell peppers. Cook for about 5 minutes, allowing them to soften and caramelize slightly.
  4. If using, add your cooked sausage or bacon now, letting the savory essence meld with the veggies.
  5. Create 4 little wells in the skillet with your spatula. Crack an egg into each well.
  6. Sprinkle the cheese generously over the skillet. Cover and cook for another 5-7 minutes, or until the eggs are cooked to your liking.
  7. Remove from heat and sprinkle with freshly chopped herbs. Serve immediately.
