Preparation
- Season your chicken breasts with salt and pepper on both sides.
- In a large skillet over medium-high heat, add the olive oil. When shimmering, add the chicken breasts and sear for about 5-7 minutes on each side until they are golden brown.
- Once the chicken is cooked through, transfer it to a plate and reduce the heat to medium.
- In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to let it burn.
Cooking the Sauce
- Pour in the chicken broth and scrape any browned bits off the bottom of the skillet.
- Stir in the heavy cream, Italian seasoning, and sun-dried tomatoes. Let it simmer for about 3-5 minutes until slightly thickened.
- Add the Parmesan cheese and stir until melted and well-combined.
Finishing Touches
- Return the chicken to the skillet, coating it with the luscious sauce. Cook for an additional 2-3 minutes to let the flavors meld.
- Sprinkle freshly chopped basil on top just before serving to add that pop of color and freshness.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, you can freeze the chicken and sauce in a freezer-safe container, lasting up to 3 months. When reheating, do so gently on the stovetop over low heat, adding a splash of chicken broth if necessary to restore the creamy texture.
