Preparation
  1. In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then add to the skillet. Sear for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest.
  3. In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant. Add sun-dried tomatoes, chicken broth, and heavy cream. Stir to combine.
  4. Once the sauce begins to simmer, mix in the Parmesan cheese, stirring until melted and creamy. Taste and adjust seasoning as necessary.
  5. Slice the chicken into strips and return it to the skillet with the sauce. Add the drained pasta and toss everything together until well-coated in that delicious creamy sauce.
  6. Tear fresh basil leaves and sprinkle them over the dish. Serve hot and watch your loved ones’ faces light up!

Notes

For variations, consider using sautéed mushrooms or eggplant for a vegetarian dish. Adding spinach or broccoli can sneak in extra nutrients, and a pinch of red pepper flakes can add heat.
