Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the sausage until browned, breaking it into crumbles.
  3. In a large bowl, whisk together the eggs, milk, pancake mix, maple syrup, baking powder, salt, and pepper until combined.
  4. Add half of the cooked sausage and 1 cup of cheddar cheese into the batter, stirring to incorporate.
  5. Grease a 9x13-inch baking dish and pour half of the batter into the dish.
  6. Sprinkle the remaining sausage over the batter, then pour the rest of the batter on top.
  7. Top with the remaining ½ cup of cheddar cheese.
Baking
  1. Place it in the preheated oven for 30 minutes, or until golden brown and set in the center.
  2. Let the casserole cool for about 10 minutes before slicing and serving.
  3. Drizzle with extra maple syrup if desired.
