  • 1 can cream of chicken soup Adds a rich base; use homemade for extra depth.
  • 1 cup shredded cheddar cheese Feel free to try mozzarella or pepper jack for a twist.
  • 2 cups frozen mixed vegetables A blend of peas, carrots, and corn adds color; fresh vegetables work too!
Topping
  • 1 cup crushed crackers Buttery Ritz crackers bring a nice flavor.
  • 1/2 teaspoon garlic powder Fresh garlic will elevate the flavor if preferred.
  • Salt and pepper Essential for balancing flavors.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the cooked chicken, sour cream, cream of chicken soup, garlic powder, and mixed vegetables. Stir until evenly coated.
  3. Sprinkle salt and pepper according to taste.
  4. Transfer the mixture to a greased 9x13 inch baking dish.
  5. Generously sprinkle shredded cheddar cheese over the mixture.
  6. Crush the crackers and layer them over the cheese.
Baking
  1. Place the dish in the oven and bake for 25-30 minutes, or until bubbly and golden.
  2. Remove from the oven and let it sit for a few minutes before serving hot.

Notes

You can make it ahead, and it freezes beautifully. Allow to rest for 5-10 minutes before serving to enhance the flavors.
