Preparation
- Slice the flank steak against the grain into thin strips.
- In a bowl, combine soy sauce and brown sugar, whisking until the sugar dissolves. Add the beef strips and let them marinate for at least 10 minutes.
- Sprinkle cornstarch over the beef and toss until well-coated.
Cooking
- In a large skillet, heat vegetable oil over medium-high heat until shimmering.
- Add the beef in batches and sear for about 2-3 minutes until browned, then set aside.
- In the same skillet, add ginger and garlic. Sauté until aromatic.
- Return the beef to the skillet, add the marinade mixture, and cook for an additional 2-3 minutes until the sauce thickens.
- Sprinkle sliced green onions on top before serving.
Notes
Mongolian Beef can be served over rice or cauliflower rice for a low-carb option. Customize with additional vegetables for variety.
