Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the salted chicken breasts until golden brown. Once done, cut into bite-sized pieces.
- In a bowl, mix the cream of chicken soup with corn, diced bell peppers, onions, minced garlic, and seasonings.
- Gently fold in the cooked chicken pieces and half of the Monterey Jack cheese into the mixture.
Baking
- Pour everything into a casserole dish and top with the remaining cheese.
- Place in the oven and bake for about 25-30 minutes or until bubbly and the cheese is melted.
- Serve hot, garnished with fresh herbs if desired.
Notes
Mix in sautéed mushrooms or spinach for added nutrition. For a kick, consider adding jalapeños or your favorite hot sauce. You can also try different cheese varieties.
