  • 2 cups Monterey Jack Cheese Divided for layering.
  • 1 can Cream of Chicken Soup Acts as a flavorful base.
  • 1 cup Corn Adds sweetness and texture.
  • 1 cup Bell Peppers Diced, for color and crunch.
  • 1 cup Onions Diced, enhances flavor.
  • 2 cloves Garlic Minced, for aromatic base.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the salted chicken breasts until golden brown. Once done, cut into bite-sized pieces.
  3. In a bowl, mix the cream of chicken soup with corn, diced bell peppers, onions, minced garlic, and seasonings.
  4. Gently fold in the cooked chicken pieces and half of the Monterey Jack cheese into the mixture.
Baking
  1. Pour everything into a casserole dish and top with the remaining cheese.
  2. Place in the oven and bake for about 25-30 minutes or until bubbly and the cheese is melted.
  3. Serve hot, garnished with fresh herbs if desired.

Notes

Mix in sautéed mushrooms or spinach for added nutrition. For a kick, consider adding jalapeños or your favorite hot sauce. You can also try different cheese varieties.
