Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tray with cupcake liners or grease it lightly.
  2. In a large bowl, mix together the flour, oats, baking powder, baking soda, cinnamon, salt, and brown sugar.
  3. In another bowl, whisk together the eggs, oil, and vanilla extract.
  4. Gently fold the wet ingredients into the dry mixture, being careful not to overmix.
  5. Stir in the carrots, apple, walnuts, coconut, and raisins.
  6. Spoon the batter into each muffin cup, filling them about three-quarters full.
Baking
  1. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  2. Allow them to cool in the pan for 5-10 minutes before transferring to a wire rack to cool completely.
