  • 16 oz Fresh Cheese Tortellini Opt for spinach or mushroom variety for added flavor.
  • 1 lb Italian Sausage Use sweet or spicy, or a lighter alternative like ground turkey or chicken.
  • 2 pieces Bell Peppers Diced, a medley of colors adds a festive touch; zucchini can be used as a twist.
  • 4 cups Spinach Fresh spinach adds nutrition; kale can also be used.
  • 4 cloves Garlic Minced for a fragrant base.
  • 24 oz Marinara Sauce Homemade or store-bought works.
  • 2 cups Mozzarella Cheese Shredded, substitute with dairy-free cheese if desired.
  • ½ cup Parmesan Cheese Grated for savory depth.
  • Olive Oil For sautéing the veggies.
  • Italian Seasoning A blend of basil, oregano, and thyme.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil and the Italian sausage. Cook until browned and crumbled, about 5-7 minutes.
  3. Add minced garlic and diced bell peppers. Sauté until fragrant and peppers soften a bit, about 3-4 minutes.
  4. Add the fresh spinach to the skillet, cooking until just wilted.
  5. In a large baking dish, layer half of the marinara sauce, followed by half of the tortellini, and half of the sausage-veggie mixture. Repeat the layers.
  6. Pour the remaining marinara sauce over the final layers and sprinkle with mozzarella and Parmesan cheese.
Baking
  1. Cover the dish with foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  3. Allow the dish to cool for 5-10 minutes before serving.

Notes

Add more veggies such as broccoli, artichokes, or mushrooms for diversity. Fresh herbs like basil or parsley can brighten the dish. For spicy kicks, add red pepper flakes to sausage.
