Preparation
  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well mixed.
  2. In another bowl, combine the milk, egg, and melted butter. Whisk until well combined.
  3. Gently pour the wet ingredients into the dry ingredients, stirring until just combined. The batter should be lumpy.
Cooking
  1. Preheat a non-stick skillet or griddle over medium heat until a sprinkle of water sizzles on contact.
  2. Pour about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
  3. If cooking multiple pancakes, keep them warm in an oven set to low heat.
  4. Stack the pancakes high and serve with your favorite toppings like maple syrup, fresh fruits, or whipped cream.
