Sauce Ingredients

  • 4 cloves Garlic, minced Use more if desired.
  • 4 cups Fresh Spinach Other greens like kale can be added.
  • 1 cup Heavy Cream Use coconut cream for a dairy-free alternative.
  • 1 cup Parmesan Cheese, grated Nutritional yeast can be used for a non-dairy option.
  • to taste Salt Essential seasoning.
  • to taste Pepper, freshly ground Essential seasoning.

Method
 

Cooking the Pasta
  1. In a large pot, bring salted water to a boil and cook your pasta according to package instructions. Stir occasionally to prevent sticking.
Making the Sauce
  1. While the pasta cooks, melt butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  2. Fold in the fresh spinach and let it wilt, stirring frequently for about 2-3 minutes.
  3. Pour in heavy cream, stirring to combine, and let the mixture bubble gently.
Combining Ingredients
  1. Drain the pasta and add it directly to the skillet with the creamy sauce. Toss everything thoroughly to coat the pasta.
  2. Stir in grated Parmesan, salt, and pepper. Adjust to taste.
Serving
  1. Plate the pasta, garnishing with more Parmesan and a sprinkle of black pepper. Enjoy while it’s warm!

Notes

For a protein boost, add grilled chicken or shrimp. For a vegan version, swap the butter for olive oil and use coconut milk.
