Preparation
- In a large pot, heat the olive oil over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp, seasoning them with salt and pepper, and cook until they turn pink, about 2-3 minutes. Remove from pot and set aside.
Cooking
- Add halved cherry tomatoes to the pot and cook for 2 minutes until softened.
- Stir in the orzo pasta and chicken broth. Bring to a boil, then reduce heat to simmer.
- Cook, stirring occasionally, until the orzo is al dente, approximately 10-12 minutes.
- Once cooked, stir in spinach and the cooked shrimp. Drizzle with lemon juice and toss well to combine.
- Remove from heat, garnish with fresh parsley, and serve hot.
Notes
Spice it up with red pepper flakes or use chickpeas and vegetable broth for a vegetarian option. For a creamy twist, stir in cream cheese.
