For the Pasta
  • 1 lb Shrimp, peeled and deveined Lean protein source
  • 1 cup Orzo pasta Adds heartiness to the dish

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the shrimp, seasoning them with salt and pepper, and cook until they turn pink, about 2-3 minutes. Remove from pot and set aside.
Cooking
  1. Add halved cherry tomatoes to the pot and cook for 2 minutes until softened.
  2. Stir in the orzo pasta and chicken broth. Bring to a boil, then reduce heat to simmer.
  3. Cook, stirring occasionally, until the orzo is al dente, approximately 10-12 minutes.
  4. Once cooked, stir in spinach and the cooked shrimp. Drizzle with lemon juice and toss well to combine.
  5. Remove from heat, garnish with fresh parsley, and serve hot.

Notes

Spice it up with red pepper flakes or use chickpeas and vegetable broth for a vegetarian option. For a creamy twist, stir in cream cheese.
