Method
 

Preparation
  1. Dice the chicken into bite-sized pieces, chop the bell peppers, and cut the broccoli into florets.
Cooking
  1. In a large skillet or wok, heat sesame oil over medium-high heat until it shimmers.
  2. Add the chicken, minced garlic, and ginger to the pan. Stir-fry for about 5-7 minutes until the chicken is golden brown and cooked through.
  3. Toss in the bell peppers and broccoli. Stir-fry for another 3-4 minutes until they are crisp-tender.
  4. Add the diced pineapple and soy sauce, stirring well to combine. Cook for an additional 2-3 minutes until heated through.
  5. Remove from heat, adjust seasoning if necessary, and serve warm over rice or quinoa.

Notes

To boost nutrition, add extra greens like spinach or kale. Store leftovers in an airtight container for up to 3 days.
