- In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onions and sliced mushrooms. Sauté until golden brown and tender, about 5 minutes.
- Push the vegetables to the side of the pan and add the beef strips. Cook until browned, about 3–4 minutes.
- Sprinkle the flour over the beef and vegetables, stirring well to coat. Gradually pour in the beef broth while stirring continuously. The sauce will thicken as it simmers; give it about 5 minutes.
- Reduce the heat to low and stir in the sour cream, Worcestershire sauce, and Dijon mustard, if using. Keep stirring until well combined and creamy, about 2–3 minutes.
- Add salt and pepper to taste. Optionally, toss in fresh chopped parsley for extra flair.
Notes
Swap sour cream for Greek yogurt for a healthier option. Add seasonal vegetables like spinach during the last few minutes of cooking for added nutrients and flavor.
