Ingredients

Main Ingredients
  • 1 pound beef sirloin (or flank steak, thinly sliced) Slice against the grain for tenderness.
  • 1 medium onion, finely chopped Adds sweetness and depth.
  • 2 cups mushrooms, sliced Adds earthiness and umami.
  • 2 cups beef broth For rich, savory flavor.
  • 1 cup sour cream For creaminess; substitute with Greek yogurt for a healthier option.
  • 3 tablespoons all-purpose flour To thicken the sauce.
  • 2 cloves garlic, minced For aromatic depth.
  • 1 tablespoon Worcestershire sauce Enhances flavor with a hint of tang.
  • 1 tablespoon Dijon mustard Optional, for a touch of sophistication.
  • to taste salt and pepper
  • to taste fresh parsley, chopped For garnish; adds a pop of color and freshness.

Method

Cooking Instructions
  1. In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onions and sliced mushrooms. Sauté until golden brown and tender, about 5 minutes.
  2. Push the vegetables to the side of the pan and add the beef strips. Cook until browned, about 3–4 minutes.
  3. Sprinkle the flour over the beef and vegetables, stirring well to coat. Gradually pour in the beef broth while stirring continuously. The sauce will thicken as it simmers; give it about 5 minutes.
  4. Reduce the heat to low and stir in the sour cream, Worcestershire sauce, and Dijon mustard, if using. Keep stirring until well combined and creamy, about 2–3 minutes.
  5. Add salt and pepper to taste. Optionally, toss in fresh chopped parsley for extra flair.

Notes

Swap sour cream for Greek yogurt for a healthier option. Add seasonal vegetables like spinach during the last few minutes of cooking for added nutrients and flavor.
