  • 6 large eggs, room temperature They create that custardy center.
  • 2 cups milk or dairy-free milk Oat or almond work well for a dairy-free version.
  • 1/2 cup heavy cream or coconut cream Optional for richness.
  • 1/3 cup pure maple syrup Plus extra for serving; honey works too.
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon Aromatic and warm.
  • 1 pinch nutmeg Aromatic and warm.
  • 1/4 teaspoon salt To balance sweetness.
  • 3 tablespoons melted butter or coconut oil Plus extra for greasing the dish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and butter a 9x13-inch baking dish.
  2. Toss the cubed bread and blueberries in the prepared dish, distributing berries evenly.
  3. In a large bowl, whisk together eggs, milk, cream (if using), maple syrup, vanilla, cinnamon, nutmeg, salt, and melted butter until smooth and glossy.
  4. Pour the custard evenly over the bread and berries, pressing down gently with a spatula.
  5. Let it sit for 10 minutes if using very fresh bread; otherwise, proceed directly to baking.
  6. Bake uncovered for 35–40 minutes, or until golden brown and a knife inserted in the center comes out clean.
  7. Let it rest for 5–10 minutes before serving.

Notes

Serve warm with butter, maple syrup, and powdered sugar. Store leftovers in an airtight container for up to 4 days, or freeze baked slices for up to 2 months. Reheat individual slices in the microwave or oven.
