Preparation
  1. Start by chopping your bell pepper and mincing the garlic and ginger.
Cooking
  1. In a large skillet, heat a tablespoon of oil over medium heat.
  2. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the minced garlic and ginger and sauté for another minute until fragrant.
  4. Pour in the sweet chili sauce and soy sauce, stirring to coat the chicken evenly.
  5. Let it simmer for 2-3 minutes until the sauce thickens slightly.
  6. Add the chopped bell peppers and stir until just tender, about 2 more minutes.
  7. Spoon the chicken over rice or noodles and garnish with sesame seeds or chopped green onions if desired.

Notes

For those who love heat, add sliced jalapeños or a sprinkle of red pepper flakes. Substitute with baked or grilled chicken for a lighter version.
