Preparation
- Start by gathering your chicken, ranch dressing mix, cream of chicken soup, chicken broth, and cream cheese.
Cooking
- Place the chicken breasts at the bottom of your crock pot.
- Sprinkle the ranch dressing mix evenly over the chicken.
- Pour the can of cream of chicken soup over the chicken, followed by the chicken broth.
- Dollop the cream cheese on top. Don’t worry about mixing just yet; let it melt as it cooks.
- Cover the crock pot and set it on low for 6-8 hours or high for 3-4 hours.
- Once done, remove the chicken, shred it with two forks, and return it to the pot. Stir well to combine everything.
Serving
- Spoon the creamy ranch chicken over rice, pasta, or a fresh salad, and dig in!
Notes
For extra flavor, sear the chicken before adding it to the crock pot. You can also swap chicken breast for thighs, and use low-fat cream cheese or Greek yogurt to lighten it up. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
