  • skewers Wooden or metal skewers; soak wooden ones in water for 30 minutes.

Preparation
  1. Start by chopping the chicken breasts into uniform, bite-sized pieces.
  2. In a large bowl, combine the chicken, ranch dressing mix, minced garlic, and olive oil. Let it marinate for about 10 minutes.
Cooking
  1. Thread the marinated chicken pieces onto skewers, alternating with your choice of veggies.
  2. Preheat your grill or grill pan to medium-high heat.
  3. Cook the skewers on the grill for 5-7 minutes on each side, until the chicken is cooked through.
  4. In the last minute of cooking, sprinkle the grated Parmesan cheese over the skewers.
  5. Remove from grill and let them rest for a minute before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F for around 10 minutes. Can be frozen for up to three months.
