Preparation
- Start by chopping the chicken breasts into uniform, bite-sized pieces.
- In a large bowl, combine the chicken, ranch dressing mix, minced garlic, and olive oil. Let it marinate for about 10 minutes.
Cooking
- Thread the marinated chicken pieces onto skewers, alternating with your choice of veggies.
- Preheat your grill or grill pan to medium-high heat.
- Cook the skewers on the grill for 5-7 minutes on each side, until the chicken is cooked through.
- In the last minute of cooking, sprinkle the grated Parmesan cheese over the skewers.
- Remove from grill and let them rest for a minute before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F for around 10 minutes. Can be frozen for up to three months.
