Method
 

Preparation
  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté until it becomes fragrant, about 1-2 minutes.
  3. Stir in the crushed tomatoes, oregano, salt, and pepper. Allow the mixture to simmer for 5 minutes.
  4. Reduce the heat to low, and gently fold in the cottage cheese. The sauce will start to thicken beautifully.
  5. Taste your sauce and adjust seasoning if necessary. This is the moment to sprinkle in that optional Parmesan cheese if you’re using it.
  6. For a creamier texture, use an immersion blender or transfer everything to a traditional blender.
  7. Serve the sauce over your favorite pasta, or enjoy it on its own.

Notes

Optional: Add sautéed spinach or mushrooms for added nutrients, and fresh herbs for color and freshness.
