- In a medium saucepan, heat the olive oil over medium heat.
- Add the minced garlic and sauté until it becomes fragrant, about 1-2 minutes.
- Stir in the crushed tomatoes, oregano, salt, and pepper. Allow the mixture to simmer for 5 minutes.
- Reduce the heat to low, and gently fold in the cottage cheese. The sauce will start to thicken beautifully.
- Taste your sauce and adjust seasoning if necessary. This is the moment to sprinkle in that optional Parmesan cheese if you’re using it.
- For a creamier texture, use an immersion blender or transfer everything to a traditional blender.
- Serve the sauce over your favorite pasta, or enjoy it on its own.

Optional: Add sautéed spinach or mushrooms for added nutrients, and fresh herbs for color and freshness.
