Preparation
  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually blend in the dry ingredients until just combined—be careful not to overmix!
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to make it easier to roll.
  6. Preheat your oven to 350°F (175°C).
  7. On a lightly floured surface, roll out the dough to about ¼-inch thickness. Cut out your desired shapes using cookie cutters.
Baking
  1. Place cookies on a parchment-lined baking sheet and sprinkle with colored sugar if desired.
  2. Bake for 8-10 minutes, until edges are lightly golden.
  3. Let them cool on the baking sheet for 5 minutes before transferring them to a wire rack.
