Preparation
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually blend in the dry ingredients until just combined—be careful not to overmix!
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to make it easier to roll.
- Preheat your oven to 350°F (175°C).
- On a lightly floured surface, roll out the dough to about ¼-inch thickness. Cut out your desired shapes using cookie cutters.
Baking
- Place cookies on a parchment-lined baking sheet and sprinkle with colored sugar if desired.
- Bake for 8-10 minutes, until edges are lightly golden.
- Let them cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free blend. Consider adding lemon zest for a refreshing twist or almond extract for extra flavor.
