Ingredients

Main Ingredients
  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 can (10 oz) diced tomatoes with green chilies (such as Rotel) Choose mild or hot based on spice preference.
  • 1 tbsp taco seasoning You can use your own blend or a store-bought option.
  • 8 oz cream cheese Consider using low-fat cream cheese if desired.
  • 1 cup shredded cheddar cheese Sharp cheddar adds a bolder flavor, or try pepper jack.
Optional Toppings
  • chopped green onions
  • jalapeƱos
  • sour cream

Method

Preparation
  1. In a large skillet over medium heat, add your ground beef. Stir and break it up until browned.
  2. Once the beef is cooked through, drain the excess fat. Stir in the taco seasoning and mix well.
Cooking
  1. Pour in the diced tomatoes with green chilies and stir gently to incorporate.
  2. Add cubed cream cheese to the skillet and stir continuously until melted, creating a creamy sauce.
  3. Mix in the shredded cheddar cheese until fully melted and creamy.
  4. Remove from heat and serve warm alongside tortilla chips or fresh veggies.

Notes

Leftovers can be stored in an airtight container for up to 3 days. To reheat, warm on low heat, stirring frequently. For an even creamier texture, let the dip rest before serving.
