Ingredients

Main Ingredients
  • 1 lb ground beef The heart of the dip, providing protein and depth of flavor.
  • 8 oz Velveeta cheese Brings that delightful creaminess; can substitute with reduced-fat cheese.
  • 1 can (10 oz) Rotel diced tomatoes Adds a zesty kick; for a milder version, use plain diced tomatoes.
  • 1 packet taco seasoning Elevates the flavor; adjust based on spice preference.
  • Tortilla chips Perfect for scooping up this flavorful dip.

Method

Preparation
  1. In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Make sure to crumble it as it cooks for a lovely texture.
  2. Once the beef is cooked, drain any excess fat from the pan.
  3. Stir in the taco seasoning, ensuring the beef is well-coated with flavor.
  4. Reduce heat to low, and add the Velveeta cheese to the skillet. Stir until it melts into a creamy mixture.
  5. Finally, stir in the can of Rotel diced tomatoes (undrained) into the creamy beef mixture. Allow it to heat through for a few minutes.

Notes

For a creamier texture, add a little cream cheese along with the Velveeta. If short on time, you can prepare this dip in a slow cooker: combine all ingredients and cook on low for 2-3 hours.
