- In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Make sure to crumble it as it cooks for a lovely texture.
- Once the beef is cooked, drain any excess fat from the pan.
- Stir in the taco seasoning, ensuring the beef is well-coated with flavor.
- Reduce heat to low, and add the Velveeta cheese to the skillet. Stir until it melts into a creamy mixture.
- Finally, stir in the can of Rotel diced tomatoes (undrained) into the creamy beef mixture. Allow it to heat through for a few minutes.
Notes
For a creamier texture, add a little cream cheese along with the Velveeta. If short on time, you can prepare this dip in a slow cooker: combine all ingredients and cook on low for 2-3 hours.
