  • 4 medium potatoes Russet or Yukon Gold work beautifully.
  • 1 medium onion A yellow onion is ideal for a touch of sweetness.
  • 2 cloves garlic Fresh garlic adds depth; garlic powder can be used as a substitute.
  • 1 each bell pepper Any color adds color and slight crunch.
  • 2 tablespoons olive oil Essential for sautéing.
  • 1 teaspoon paprika Adds warmth and a hint of smokiness.
  • to taste salt and pepper Essential for flavor.
  • as needed fresh parsley For garnish.

Method
 

Preparation
  1. Start by dicing the potatoes into bite-sized pieces, chopping the onion, and slicing the bell pepper. Mince the garlic.
Cooking
  1. In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the sausage and cook until browned and fully cooked, about 5-7 minutes. Break it into smaller pieces as it cooks.
  2. Once the sausage is cooked, push it to the side of the skillet. Add the chopped onion and bell pepper in the vacant space. Cook for about 2-3 minutes.
  3. Add the diced potatoes to the skillet, along with the remaining tablespoon of olive oil, garlic, paprika, salt, and pepper. Stir well to coat everything.
  4. Allow the mixture to cook, stirring occasionally, for about 15-20 minutes, until the potatoes are fork-tender and crispy on the edges.
  5. Once cooked, taste and adjust seasoning if necessary. Garnish with fresh parsley and serve.

Notes

For variations, use chicken or turkey sausage, add extra veggies like spinach, or try different seasonal ingredients.
