  • 1 cup Shredded cheddar cheese Adds melty richness; nutritional yeast is a great dairy-free swap.
  • 8 small Flour tortillas Whole wheat or gluten-free wraps work fine.
  • 1 tablespoon Butter or oil For sautéing and brushing the wrappers.
  • to taste Salt and black pepper Adjust according to your preference.

  • Chopped green onions, bell pepper, or a pinch of paprika For added flavor and warmth.

Preparation
  1. Heat a skillet over medium heat and add the sausage, breaking it into small pieces. Cook until golden brown and cooked through, about 6–8 minutes. Drain excess fat if needed.
  2. In a bowl, whisk eggs with milk, salt, and pepper. In a separate nonstick skillet, melt a bit of butter and pour in eggs. Stir gently until just set but still soft.
Assembly
  1. Lay a tortilla flat. Spoon a line of scrambled eggs down the center, top with browned sausage and a sprinkle of shredded cheese. Add green onions or peppers if using.
  2. Fold the sides in and roll the tortilla tightly from one end to the other. Brush the outside lightly with melted butter or oil.
Cooking
  1. Place roll-ups seam-side down in a clean skillet over medium heat, or bake at 375°F (190°C) for 8–10 minutes until golden and crisp, turning once.
  2. Let the roll-ups rest for a minute, then slice in half or serve whole.
