Preparation
- Heat a skillet over medium heat and add the sausage, breaking it into small pieces. Cook until golden brown and cooked through, about 6–8 minutes. Drain excess fat if needed.
- In a bowl, whisk eggs with milk, salt, and pepper. In a separate nonstick skillet, melt a bit of butter and pour in eggs. Stir gently until just set but still soft.
Assembly
- Lay a tortilla flat. Spoon a line of scrambled eggs down the center, top with browned sausage and a sprinkle of shredded cheese. Add green onions or peppers if using.
- Fold the sides in and roll the tortilla tightly from one end to the other. Brush the outside lightly with melted butter or oil.
Cooking
- Place roll-ups seam-side down in a clean skillet over medium heat, or bake at 375°F (190°C) for 8–10 minutes until golden and crisp, turning once.
- Let the roll-ups rest for a minute, then slice in half or serve whole.
