  • 1 pound green beans Fresh or frozen.
  • 2 pounds potatoes Russet or baby potatoes can be used; sweet potatoes are a great substitute.
  • 1 medium onion Use shallots for a milder flavor.
  • 2 cloves garlic Roast for a sweeter profile.
  • 2 tablespoons olive oil Other vegetable oils can be used.
  • to taste salt Along with pepper and Italian herbs to elevate the dish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a pan, cook the sausage over medium heat until browned and crispy.
  3. Add chopped onion and minced garlic to the same pan and cook until translucent, about 3-5 minutes.
  4. Slice the potatoes into bite-sized pieces and toss them with olive oil, salt, pepper, and Italian herbs in a large casserole dish.
  5. Add the cooked sausage, sautéed onion, and garlic mixture to the potatoes, and fold in the green beans gently.
Cooking
  1. Cover the dish with foil and bake for 30-35 minutes.
  2. Remove the foil and bake for another 10-15 minutes until the top is crispy.

Notes

Feel free to add other vegetables or sprinkle with cheese before the final bake. For spicy flavor, add red pepper flakes.
