  • 5 medium potatoes, diced Yukon Gold or red potatoes work beautifully
  • 1 pound fresh green beans, trimmed Feel free to swap for frozen if that’s what you have
  • 1 cup heavy cream For a creamy texture; half-and-half is a lighter option
  • 1 cup shredded cheese Cheddar melts beautifully, but feel free to mix in your favorites
  • 1 medium onion, diced A sweet onion adds a depth of flavor
  • 3 cloves garlic, minced Fresh garlic adds savory magic
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the Italian sausage. Cook until browned and cooked through, about 5-7 minutes.
  3. Remove the sausage from the skillet and drain excess fat. Add diced onion and garlic to the skillet, stirring until softened, about 3-4 minutes.
  4. In a large mixing bowl, combine the cooked sausage, sautéed onions and garlic, diced potatoes, and green beans. Pour in the heavy cream, sprinkle with cheese, and season with salt and pepper.
  5. Transfer the mixture to a greased 9x13 baking dish.
  6. Cover the dish with aluminum foil and bake for 25 minutes.
  7. After 25 minutes, remove the foil and return the dish to the oven for an additional 5-10 minutes, until the top is bubbly and golden.

Notes

For healthier options, substitute turkey sausage or add extra vegetables. Allow the casserole to rest for 5-10 minutes after baking to set up.
