  • 3 cups mixed vegetables (bell peppers, broccoli, snap peas – feel free to swap spinach with kale for a stronger flavor)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced (or a teaspoon of ground ginger)
  • 2 tablespoons soy sauce (low-sodium for a healthier twist)
  • 1 tablespoon olive oil or sesame oil
  • Salt and pepper, to taste
  • 1 teaspoon sesame seeds (optional, for garnishing)
  • Cooked rice or noodles, for serving

  1. In a large skillet or wok, heat the olive or sesame oil over medium-high heat.
  2. Add the sausage, breaking it apart with a wooden spoon. Cook until nicely browned and cooked through, about 8-10 minutes.
  3. Toss in your mixed vegetables, garlic, and ginger. Stir everything together, letting those vibrant colors and aromas mingle. Cook for another 5-7 minutes until the vegetables are tender-crisp.
  4. Pour in the soy sauce, and season with salt and pepper to taste. Stir everything well to ensure the sausage and veggies are perfectly coated in that umami goodness.
  5. Remove from heat. Sprinkle sesame seeds on top for a nutty crunch. Serve your sizzling sausage stir-fry over warm cooked rice or toss it with noodles for a delicious twist.
