Preparation
- Preheat the oven to 400°F (200°C).
- Wash and dice the potatoes into small cubes.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add diced onion and bell pepper, and sauté until soft and fragrant, about 4-5 minutes.
- In a large mixing bowl, combine the sautéed veggies, diced potatoes, eggs, cheese, garlic powder, salt, and pepper. Mix until everything is coated.
- Transfer the mixture to a greased baking dish, spreading it out evenly.
- Bake in the oven for 20 minutes, until the top is golden brown and the potatoes are tender.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. It also freezes well for up to a month. To reheat, thaw overnight and warm in the oven at 350°F for about 15 minutes.
