Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Halve the baby potatoes for even cooking. Toss them in a bowl with olive oil, salt, and half of the thyme.
  3. In a large, oven-safe skillet, add the sliced sausage over medium heat. Sauté until they begin to brown, about 5-7 minutes.
  4. Stir in the sliced onions, minced garlic, and green beans. Cook for another 3 minutes until the onions are softened.
  5. Add the seasoned potatoes into the skillet, mixing everything together gently.
Cooking
  1. Sprinkle the remaining thyme over the skillet and transfer it to the preheated oven.
  2. Bake for 25-30 minutes, or until the potatoes are golden brown and crispy, and the green beans are tender.
Serving
  1. Remove from the oven, garnish with fresh herbs, and enjoy warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. To reheat, place the dish in a preheated oven at 350°F (175°C) for 15-20 minutes, or microwave individual portions.
