Sesame Chicken with Matbucha

Ingredients
  

For the Chicken
  • 1 lb Chicken Thighs Juicy and flavorful, can substitute with chicken breasts.
  • 2 tbsp Sesame Oil Adds rich, nutty flavor.
  • 1/4 cup Soy Sauce Use tamari for gluten-free.
  • 2 tbsp Honey A touch of sweetness; maple syrup also works.
  • 3 cloves Garlic Crushed for aromatic essence.
  • 1 inch Fresh Ginger Grated for a zesty zing.
  • 1 cup Matbucha Spicy tomato and pepper sauce.
  • 1 tbsp Sesame Seeds Toasted for crunch.

Method
 

Preparation
  1. In a large bowl, combine the chicken thighs, sesame oil, soy sauce, honey, garlic, and ginger. Let it marinate for about 10 minutes.
Cooking
  1. Heat a skillet over medium heat. Add the marinated chicken, reserving some marinade, and sear for about 5-7 minutes on each side until golden brown and cooked through.
  2. While the chicken cooks, warm the matbucha in a separate saucepan over low heat, stirring occasionally.
  3. Once the chicken is done, pour the reserved marinade over it and allow to simmer for an additional 2 minutes.
Serving
  1. Plate the sesame chicken atop a generous serving of matbucha, sprinkling toasted sesame seeds over the top.

Notes

For added spice, include red pepper flakes or sriracha. Serve with jasmine rice or pita. To make paleo-friendly, substitute honey with coconut sugar and use cauliflower rice.
